Chef and restaurateur Michael Beltran is among the Miami natives driving the city’s rise as a culinary destination. Beltran cooked—and learned—at a number of institutions in the area, including Casa Juancho and Cypress Room, before launching Cuban-New American restaurant, Ariete, in the Coconut Grove neighborhood in 2016. Last year marked unprecedented growth for Beltran, who opened three new concepts: Leña is a food hall take of Ariete, Cuban-American diner Chug’s specializes in breakfast and pastelitos, and Navé serves coastal Italian cuisine. On the libation side, Beltran also owns Taurus Beer & Whisk(e)y and The ScapeGoat. Native son As a
